Why not just use a VM like Parallels or VMware Fusion?

They both have modes to integrate into the UI, its a lot faster than going the free wine route. Lots of people run it for things like exchange support in MS Office 2007 (08 is terrible).

You can, but then you need to buy Windows to run on it. The last link I posted tells how to convert a VPC image (free from MS) into a format that can be run under Parallels or VMWare directly, without having to buy Windows.

Parallels and VMWare aren't free either.  Neither is very expensive, but still a fuckload more than I would be willing to pay to play with IE.

Anyway, the point was to run IE8 on a Mac, running it through a vm is cheating.

But I have a question about Parallels and VMWare.  Will they use separate cores?  Or separate processors?  Do they thread?  Do they "nice"?  If I had a dual Xeon MacPro, would it run both OSes on separate processors?

Parallels will use up to 4 procs and VMWare 2.

They are apps, so you can renice if you want to.

Does Parallels work well?  It would be way cool to install random Linuxes every week.

My specs:
MacBookPro 15"
Intel Core Duo 2.0 GHz
2GB RAM
200GB HD @ 7200rpm (50GB free)

Should work fine. You can choose cores, ram, space, etc. I prefer Parallels to Fusion.
