if you don't want bloat and want to keep simplicity and lack of features closest to that of windows, i'm thinking lycrosis LX. (not sure if you have to pay or not, i downloaded it for free). i prefer redhat to mandrake, but they both come with a lot more than you'd probably need.

Doctor V:
Note though, that with either Redhat or Mandrake, while they are bloated with the full install, you can choose which packages you want during installation, making it only as bloated as you want it to be.  I like Redhat a bit better, but still find Mandrake easier.  I've never used lycrosis.

Calum:
mandrake is as good as any for a start off. it provides everything windows does, and much more.

once you get more comfortable with mandrake, you might want to try some others, you might not. either way, mandrake is a good starting point for a 'PC' based non-windows system.

Kintaro:
Mandrake is great....

But Red-Hats better in my opinion!
